The Advanced Diploma in Food Technology & Operations is designed to provide learners with advanced knowledge in food science, food production, and the business aspects of the food industry. The programme integrates scientific principles with operational and marketing strategies to develop innovative food products and efficient production processes.

Students will gain in-depth understanding of nutrition, food safety, and food technology, along with key areas such as food and beverage operations, product development, and industry regulations. The course also emphasizes marketing, advertising, and business management within the food sector.

Through practical training and industry-relevant competencies, students will be prepared to manage food operations, ensure quality and safety standards, and contribute to innovation in the food industry.

Course Objectives 

  1. To develop competencies for entry-level to supervisory roles in food manufacturing, food packaging, catering, and food & beverage industries.
  2. To equip students with practical knowledge and skills applicable to real-world food industry operations.
  3. To provide hands-on industry experience through internship opportunities.
  4. To develop a comprehensive understanding of food packaging, industry legislation, marketing, business operations, production, and innovation within the food sector. 
Program Structure
Internship Included

Duration: 6 Months

The programme includes an internship component that provides practical industry experience in food production, food processing, and food & beverage operations. Students will apply their knowledge in real-world environments while developing technical, communication, and teamwork skills. Internship opportunities may vary based on employer requirements and student performance. Some students may receive paid internships depending on company policies and Singapore regulations.

Course Curriculum

Develops advanced communication skills for professional environments, including understanding workplace communication, differentiating communication across organizational levels, and delivering effective presentations.

Covers food processing principles, technologies, and equipment used in the industry. Includes basic engineering concepts, processing methodologies, and the role of innovation in food production systems.

Focuses on delivering high-quality customer experiences in the food and beverage industry. Includes understanding customer expectations, service strategies, and application through case studies and practical exercises.

Introduces product development processes, product life cycle, and marketing strategies. Covers branding, advertising, and innovation in designing and promoting food products.

Provides advanced knowledge of food packaging technologies and regulatory requirements. Covers legal frameworks, labeling standards, compliance issues, and ethical advertising practices.

Develops analytical and decision-making skills by exploring current challenges in the food industry. Includes critical thinking, problem-solving, risk assessment, and leadership in addressing industry issues.

Covers operational aspects of food and beverage services, including production procedures, cost control methods, and integration of preservation, processing, and packaging in operations.

Provides practical industry exposure, enabling students to apply their knowledge in real-world environments while developing communication, teamwork, and problem-solving skills.

Students who do not meet internship requirements must complete a Research Project (2 months) with similar learning outcomes.

C6 in GCE ‘O’ Level English or equivalent qualification, or a pass in the college’s English placement test.

Experience

Work experience is not mandatory. However, candidates with prior exposure to food production, catering, hospitality, or food-related industries will have an added advantage. Mature applicants with relevant experience may be considered on a case-by-case basis.
